Yuki no Bosha Yamahai Junmai, also known as “Old Cabin”, is a traditional sake crafted by Saiya Brewery in Akita Prefecture, Japan. This sake is produced using the Yamahai method, a time-honored brewing technique that involves a longer fermentation process, resulting in a sake with deeper umami and acidity. The brewery employs Akita Sake Komachi and Yamada Nishiki rice, polished to 65%, and utilizes natural fermentation to enhance complexity.

The nose offers a harmonious blend of roasted chestnuts, brown butter, and cocoa, with subtle hints of mint.

TASTE:
On the palate, it delivers a rich and creamy texture, showcasing flavors of honey, sweet nuts, and milk chocolate, complemented by a gentle sweetness reminiscent of powdered sugar.
