The Macallan 12 Year Old Sherry Oak is part of The Macallan’s Sherry Oak Collection, maturing for 12 years entirely in sherry-seasoned oak casks (primarily European oak from Jerez, Spain). These casks are seasoned with oloroso sherry, allowing the wood to absorb the sherry and deepen its flavor contribution.

Stories Behind the Artwork

This artwork is a tribute to the River Spey, represented in three forms, with the 12 Years Old as an extension of one. A deep, warm red background connects seamlessly with the Sherry Oak Collection colour palette and signature taste.

Hand-drawn lines by David Carson represent the pattern, hills, River Spey and the distillery outline, and the touch of green hints at The Macallan landscape.

Tasting Notes

COLOR:
Deep amber to rich mahogany hue; natural colouring, with warm golden tones.

NOSE:
Strong sherry influence: dried fruits such as raisins, sultanas, prunes. Stewed or preserved fruit and red berry notes. Hints of orange zest or candied citrus. Warm spices like cinnamon, nutmeg, ginger, possibly clove. Vanilla or toffee and a rich oak presence. Floral or polished wood undertones.

TASTE:
Rich and full-bodied. More of the dried fruit (raisin, sultana), with marmalade, maybe hints of dark chocolate or stewed apple. There’s oak spice, possibly cinnamon, ginger, and some sweetness (vanilla, toffee). The texture is smooth, slightly oily or waxy in richness.

FINISH:
Long to medium-long. Oak-driven, with spicy warmth in its tail. Leaves lingering sherry, woody/spice notes (clove, pepper), perhaps a touch of dryness from the wood. Balance between sweetness and oak dryness toward the end.
