Shimonoseki Ring Kuro Sake 38 Junmai Daiginjo is a high-end sake from Yamaguchi Prefecture, crafted using 100% Yamadanishiki rice polished to 38%. Its relatively low polishing ratio (i.e. only 38% of the grain remains) signals premium quality: more subtle aroma, refined grain core, elegance, and depth. As a Junmai Daiginjo, no additional distilled alcohol is added; the sake’s character comes entirely from the rice, water, yeast, and koji. Kuro (黒, "black") in the name evokes a sense of richness, depth, and perhaps darker undertones that balance its aromatic lightness.

Tasting Notes

COLOR:
Crystal clear. Perhaps a very faint pale gold or translucent straw tint. Smooth, luxurious viscosity.

NOSE:
Delicate, refined bouquet that opens with notes of white peach, melon, and gentle floral aromas. Possibly a hint of orchard fruits (pear or apple), with subtler background hints of rice, koji, maybe a trace of honeydew.

TASTE:
Silky and full-bodied. Fruit‐driven flavor (peach, melon) with an elegant sweetness balanced by crisp acidity. The Yamadanishiki rice provides a clean core and rice umami, giving richness without heaviness. A subtle layering of delicate floral or herbal nuance may emerge with warming.

FINISH:
Clean, lingering, with fruit fading into a gracefully dry or semi-dry finish. The aftertaste likely leaves floral echoes and rice sweetness, inviting another sip.
