Shimonoseki ‒ Beni Sake 50 Junmai Daiginjo is a premium sake from Shimonoseki in Yamaguchi Prefecture. The “50” refers to the rice-polishing ratio: only 50% of the rice grain remains, giving the sake a refined, elegant character while retaining depth. As a Junmai Daiginjo, it is crafted entirely from pure rice, water, koji, and yeast — no added alcohol — and brewed to emphasize both aromatic sophistication and a clean, polished mouthfeel. Beni in Japanese suggests rouge or crimson; perhaps this naming hints at its refined presence, or a deeper warmth in its bouquet or finish.
Tasting Notes
COLOR:
Crystal clear, with perhaps a very faint pale gold or straw tint. Clean viscosity — it coats the glass lightly but remains elegant.
NOSE:
Bright and inviting. Top notes of lime zest, ripe pear, and banana, joined by delicate floral undertones. There is a freshness (citrus, orchard fruit) that opens first.
TASTE:
Full-bodied but balanced. Fruit-forward — pear and banana come through strongly, supported by subtle floral tones. The richness is tempered by a bright acidity which keeps the sake lively and prevents it from feeling overly sweet or heavy. A smooth texture; layers of flavor reveal themselves as it warms slightly.
FINISH:
Clean, lingering, with fruit fading into a gentle dryness. The acidity carries just enough grip to make the finish refreshing, leaving a clean impression that invites another sip. Slight herbal or mineral echoes may persist.
