Shimonoseki Ring Ai Sake 50 Junmai Daiginjo is a premium sake from Shimonoseki Brewery in Yamaguchi Prefecture. Brewed using the highly regarded Yamadanishiki rice polished down to 50%, it embodies the refined elegance and rich texture of top-grade Daiginjo sake. As a Junmai Daiginjo, there is no added distilled alcohol — the sake relies purely on rice, koji, water, and yeast, letting the ingredients and brewing method shine. “Ai” (藍) suggests a sense of depth, tranquility, or richness that this sake delivers with balanced fruitiness and savory nuance.

Tasting Notes

COLOR:
Crystal clear, possibly with a very subtle pale straw tint. Clean and polished, with a sheen that catches the light.

NOSE:
Fruity and elegant — lime, ripe pear, banana. Maybe lighter floral undertones or melon in the background. A freshness that opens up immediately.

TASTE:
Rich and full-bodied for Daiginjo, but with graceful structure. Fruit flavors such as pear and banana, underlaid by mild grain or rice umami. Acidity is refreshing, bringing lift that keeps the richness from becoming heavy. Smooth, round mouthfeel.

FINISH:
Long and lingering, but clean. Fruit tones fade gently; there's a polished aftertaste with just enough dryness or minerality to make the finish crisp, not cloying.
