Tasting Notes
COLOR:
The wine shows a deep straw-yellow colour with brilliant golden highlights.
NOSE:
It opens with aromas of Mediterranean scrub, thistle, medicinal herbs and wild aromatic plants; then blossoms of fresh flowers and ripe orchard fruit. There are refined mineral tones and a delicate hint of sea spray or iodine, reflective of its coastal terroir.
TASTE:
On the palate it is smooth and enveloping in structure, yet lively and fresh. It brings a pleasing balance of fruit-flower-herb complexity, with a lean, energetic acidity. A distinctive saline/mineral undertone gives it depth. The 15% barrique component adds subtle weight and texture, but the finish remains crisp and persistent, with a refreshing, slightly salty marine edge.
Food Pairing
This wine pairs beautifully with dishes of the sea and lighter fare, but has the structure to carry somewhat richer profiles too. Some pairing suggestions:
Fresh shellfish (e.g., oysters, clams, langoustines) and sushi or sashimi — the saline-mineral character echoes the sea.
Crustacean pastas or risottos — the wine’s acidity and textural lift contrast nicely with the richness of the dish.
Lightly grilled white fish (e.g., sea bass, branzino) or fish in a herb-butter sauce.
Fresh, medium-aged cheeses (e.g., goat-cheese, pecorino giovane) — the herbal and mineral tones of the wine complement such cheeses.
As an aperitif, especially when served chilled at 8-10 °C: ideal before dinner, or to accompany antipasti of seafood or fresh vegetables.
