Absinthe Sauvage – Extrait d’Absinthe 1804 is a historic and artisanal French absinthe distilled by Distillerie Les Fils d’Émile Pernot, one of Pontarlier’s respected traditional producers situated in the Jura mountains of eastern France. This expression is inspired by a recipe dating back to 1804, long before absinthe’s widespread popularity, and uses wild-harvested wormwood (Artemisia absinthium) gathered from the rocky Jura landscape — a practice that harkens back to the earliest production methods when wormwood wasn’t cultivated but collected in the wild.
Tasting Notes
COLOR:
Pale green with light golden highlights; louches to a soft milky opalescence when chilled water is added.
NOSE:
Intense herbal aromatics dominated by freshly cut wild wormwood, combined with anise seed brightness and hints of mountain grass and meadow herbs.
TASTE:
Full-flavoured and robust — rich botanical complexity with earthy wormwood character balanced by sweet fennel and anise layers. Herbal depth is evident without overwhelming bitterness, and subtle citrus or floral elements can emerge on the mid-palate.
FINISH:
Long, herbaceous, and lingering with a pleasant interplay of bitter-sweet licorice, fresh herbs, and botanical dryness.
