COLOR:
Deep, opaque dark red, often with bright crimson hues on the rim when young.
NOSE:
Rich berry fruits: dark raspberry, red cherry, stewed plums. Herbal notes, some gamey undertones. Spicy oak influence: white pepper, vanillin oak. Subtle herbal or savory touches.
TASTE:
Plush and full-bodied, with juicy dark berries and plum flavours, interwoven with oak spice (vanilla, perhaps some smoke or sweet oak). The Mourvèdre adds a bit of structure and a gamey-savory lift. Tannins are soft to moderate, leaning velvety. Acidity is lively enough to give freshness and balance.
FINISH:
A long finish, with fruit lingering, peppery spice, oak echoes. The wine pulls through with both richness and grip. The mouthfeel is plush, soft but not flabby—there is a structural backbone.
Food Pairing
Because this GSM blend has rich fruit, spice, moderate tannin and good acidity, it pairs well with fairly robust dishes. Some good options:
Grilled or roasted red meats: lamb chops, sirloin steak, beef ribs
Game meats or even duck, especially with rich flavour or sauces
Charred or smoky meats / barbecue
Hearty stews or slow-cooked dishes that allow the spice and gamey notes to mesh (ragù, braised lamb)
Dishes with tomato-based sauces, or Mediterranean herb-driven fare (e.g. ratatouille, lamb tagine)
Stronger cheeses (aged cheeses, firm cheeses) that can stand up to its intensity
