Kaetsu ‒ Ring Kyara Sake 75 Junmai Shu is a refined Junmai-shu from Ishikawa prefecture. Crafted with rice polished to 75%, this sake embraces the integrity of its raw ingredients: pure water, koji, rice, and yeast, with no added alcohol. It evokes the terroir of Ishikawa’s crisp mountain water and the traditional craftsmanship of Kaetsu brewery. The label “Ring Kyara 75” hints at its polishing ratio yet the taste goes far beyond simple numbers: depth, umami, and a subtle fragrance combine for a sake that is both grounded and elegant.
Tasting Notes
COLOR:
Clear, lightly pale straw colour; slight viscosity that coats the glass gently.
NOSE:
Soft aromas of steamed rice and koji, layered with gentle hints of toasted nuts and mild white pepper. Subtle herbal / forest floor notes (think cedar or Hinoki wood) with a whisper of warm earth.
TASTE:
Well-balanced, leaning toward savory and umami: rice-kernel sweetness, mild grainy richness, touches of mushroom or bonito stock. Acidity is moderate, giving freshness without overpowering; texture is smooth, full-bodied but not heavy. A hint of mineral or stone minerality emerges mid-palate.
FINISH:
Clean, dry-leaning finish with lingering umami, a gentle savory aftertaste, perhaps a trace of dryness or mild tannin-like structure. Overall balanced, inviting another sip.
