James E. Pepper Barrel Proof Bourbon is a Kentucky Straight Bourbon Whiskey bottled straight from the barrel — uncut and unfiltered — allowing drinkers to experience the full strength and character as it matured in oak. This expression revives a historic style once produced at the original James E. Pepper Distillery, now distilled and bottled at the revived historic site in Lexington, Kentucky (DSP-KY-5). Using a blend of older stocks and historic mash bills built from corn, rye, malted barley, and malted rye, the whiskey is aged in new toasted & charred Kentucky oak barrels and bottled at true barrel proof (typically ~105–115 proof / ~52.7% ABV), showcasing bold flavor and depth.
Tasting Notes

Deep amber–ruby hue, reflecting extended barrel aging and robust oak influence.
NOSE:
Warm, inviting aromas of toasted oak, caramel, vanilla bean, and walnuts, with hints of spice and dried dark fruit that invite a deeper sip.
