Produced by Domaine Hubert Lignier (a father–son team with biodynamic practices in Morey-Saint-Denis and Gevrey-Chambertin vineyards), Symbiose is their Bourgogne-level cuvée. It’s sourced from regional parcels and crafted with minimal intervention—native-yeast fermentations using partial whole-cluster, gentle extraction, and matured in predominantly older French oak barrels.
Tasting Notes
COLOR:
Light to medium ruby, clear and vibrant.
NOSE:
Inviting aromas of cranberry, cherry, raspberry, subtle floral and herbal notes with earthy undertones.
TASTE:
Silky and light-bodied, presenting juicy red fruits, bright acidity, fine tannins, and an earthy, slightly barnyard complexity.
FINISH:
The 2020 vintage shows blackberry and mulberry flavors with a pleasantly prickly finish.
