Tasting Notes
COLOR:
Medium ruby with garnet/hint of orange.
NOSE:
Bright red cherry, morello cherry, and raspberry. Floral notes: rose, iris, violets. Spicy and herbal hints: cloves, anise, dried orange peel, sometimes a touch of blood orange. Also earth/mineral undertones — crushed stone, mushroom.
TASTE:
Dry, elegant, with ripe red fruit (cherry, raspberry), balanced with good acidity. Tannins are firm yet silky, giving structure without overwhelming harshness. There is often a tangy herbal lift, sometimes a rustic edge or sapidity in older.
FINISH:
Long and balanced finish. The tannins resolve slowly, leaving lingering red fruit, spice, possibly dried herbs or balsamic touches, with freshness still present. Mouthfeel tends toward refined rather than heavy.
Food Pairing
This is a wine with good structure, acidity, and aromatic complexity — it works best with equally bold or flavourful dishes. Some ideal pairings:
Roasted or grilled red meats: beef, lamb or game meats (venison, wild boar)
Slow cooked braised dishes: Brasato Piemontese, osso buco, stews with herbs
Mushroom dishes: risottos with wild mushrooms; dishes with earthy tones
Aged cheeses: cheese with more intensity (Piedmontese cheeses, perhaps a well-aged pecorino or something slightly sharp)
