Domaine du Bouchot – Mon Village is a biodynamic white wine from the Pouilly-sur-Loire AOC, located in the Upper Loire Valley, France. The wine is made from 100% Chasselas, a grape known for its subtlety and delicacy. The estate, certified organic since 2009 and biodynamic since 2020, is managed by Antoine Gouffier, who took over in 2018. The vines are situated on the "Les Chantalouettes" plot, facing south-southeast at an altitude of 190 meters, with clayey-sandy soils. The average vine age is 45–50 years, and the vineyard practices include hand harvesting, natural fermentation with indigenous yeasts, and aging in 500-liter barrels. The wine is bottled unfined and unfiltered, aligning with minimal intervention principles.
