Description

Crafted from 100 % Melon de Bourgogne on organically farmed, granite- and gneiss-rich soils in the Pays Nantais, the estate vineyard averages 25-year-old vines. Grapes are hand-harvested and fermented with indigenous yeasts in cement tanks, then aged on their lees ("sur lie") until spring—without racking—retaining natural CO₂ for a subtle sparkle.

Tasting Notes

COLOR:
Very pale straw with silver and golden highlights.

NOSE:
Fine and pure, displaying floral notes, citrus, green apple, white fruits, and pronounced minerality with hints of iodine and sea air.

TASTE:
Crisp, vibrant, and taut, with flavors of lemon zest, pear, crunchy apple, salinity, crushed shells, and a yeasty undertone. Clean, long-lasting finish.

Food Pairing

Classic with oysters, seafood, shellfish, fresh fish, and also excellent as an aperitif. Pairs beautifully with salads, roasted chicken, goat cheese, and light crustaceans. Ideal served between 8–12 °C
