Description

A single-vineyard gem on a windy, south-facing hill in Monnières-St. Fiacre, Les Gras Moutons spans ~1.7 ha of sandy-clay soils rich in decomposed amphibolite and gneiss. Vines range from 20 to 70 years old and are farmed organically (transitioning to biodynamic). Grapes are whole-cluster pressed, undergo native-yeast fermentation in stainless steel, and rest on their lees for ~9 months in underground, glass-lined cement tanks before bottling with minimal fining and filtration. Domaine de la Pépière, led by Marc Olivier and now guided by Rémi Branger and Gwénaëlle Croix, is widely credited with redefining high-end Muscadet.

Tasting Notes

COLOR:
Pale gold with delicate green highlights.

NOSE:
Elegant aromas of lemon and green pear, fresh fennel, raw almond, dried herbs, melon, lemon verbena, and a subtle petrichor or wet-stone minerality.

TASTE:
Crisp, vibrant acidity frames tart apple, peach, and citrus zest. The extended lees aging gives a creamy mouthfeel layered with salinity, crushed shells, and a long, precise finish.

Food Pairing

A stellar match for seafood: oysters, scallops, lobster, shellfish, fish & chips, and richer seaside fare. Also shines with roast white meat, crunchy green salads, stinky goat cheeses, light crustaceans, and lightly spiced Asian dishes. Serve chilled at 8–12 °C.
