Description

Château‑Thébaud is a recognised Muscadet cru made from 100 % Melon de Bourgogne, organically (and often biodynamically) grown on deeply fissured “granite de Château‑Thébaud” — a sandy-clay, high-feldspar subsoil that supports roots in dry periods. After manual harvest and whole-cluster pressing, fermentation occurs naturally in underground vats. It is aged at least 30–42 months on lees with frequent bâtonnage before bottling—far longer than standard Muscadet.

Tasting Notes

COLOR:
Bright pale-gold with crystal clarity.

NOSE:
Layers of green apple, pear, fennel/anise, brioche, rock/mineral – hints of licorice and sea spray.

TASTE:
Lively yet creamy acidity, with citrus and orchard fruits balanced by lees texture. Finishes salty-mineral, taut, and elegantly structured.

Food Pairing

A versatile sea-pairing companion: ideal with oysters, scallops, turbot, John Dory, and richer fish. Also elevates lighter cheese and seafood dishes. Serve slightly chilled (12–14 °C), ideally after decanting to open up its layered profile.
