Soul of a Lion is DAOU’s crown jewel and a benchmark for Cabernet Sauvignon from Paso Robles. Named in honor of the Daou brothers’ late father, Joseph, it is a wine of power, elegance, and longevity. Crafted primarily from Cabernet Sauvignon, with small portions of Cabernet Franc and Petit Verdot, it comes exclusively from DAOU Mountain, where calcareous soils and high elevation (2,200 feet) yield fruit of remarkable concentration, structure, and balance. Aged extensively in new French oak, Soul of a Lion is a cellar-worthy wine that rivals top Napa Valley and Bordeaux bottlings.
Tasting Notes
COLOR:
Deep ruby to nearly opaque garnet.
NOSE:
Powerful bouquet of blackcurrant, blackberry, blueberry, and cassis, layered with violets, graphite, cigar box, leather, and subtle dried herbs. Hints of vanilla, mocha, and spice from French oak.
TASTE:
Intense and structured, with concentrated dark fruits (cassis, black plum, blackberry) supported by layers of cocoa, espresso, toasted oak, and savory mineral notes. Subtle floral lift and fine tobacco on the mid-palate.
FINISH:
Full-bodied, with ultra-silky tannins and a seamless balance between richness and freshness. Long, complex finish of dark fruit, spice, and earth, often lasting well over a minute.
