The Choya Extra Shiso is a refined Japanese umeshu (plum liqueur) crafted by Choya, made from 100% premium Nanko-ume fruit sourced from the Kishu region in Japan. This expression is built on the base of Choya’s Extra Years series and is uniquely infused with red shiso (perilla) leaf extract, which imparts an herbaceous, slightly bitter character and gives the liqueur its soft pink hue. The plum wine is aged for 2–3 years, allowing the ume fruit’s sweetness and acidity to develop depth, while the shiso adds a distinctive aromatic complexity.
