Tasting Notes
COLOR:
Straw yellow (often with slight greenish or silvery tints in younger vintages) indicating freshness.
NOSE:
Delicate white floral notes, almond, apricot; hints of balsamic, sometimes white flowers, with citrus (lemon, green apple) and subtle herbal or mineral tones. In some vintages, there are smoky or herbal accents (e.g. grilled rosemary) after aeration.
TASTE:
Fresh and lively acidity, dry, with a clean, linear profile. Flavours echo citrus (lemon, grapefruit), stone fruit (peach, apricot), and green apple. There is also mineral/sapidity, almond or nutty back-notes.
FINISH:
The texture is often moderately full for a white, yet well balanced. Some persistence on the finish.

Starters / appetizers: Delicate cold or lukewarm hors d’oeuvres, light antipasti (e.g. crostini, cold seafood, fresh cheeses)
Seafood & Fish: Boiled, steamed or grilled fish; sushi or sashimi; shellfish; crustaceans; lighter pasta with seafood sauces.
Poultry / White Meats: Lightly seasoned chicken, pork, veal—especially in preparations that are steamed, poached, or lightly roasted.
Vegetarian Dishes: Salads, mild vegetable dishes, creamy or almond-based sauces, and mildly flavoured cheeses.
Other Pairings: It also works as an aperitif thanks to its freshness. Some people even pair it with pizza.
