Description
The Canasta Cask Matured edition from Bunnahabhain was released in celebration of the 2023 Fèis Ìle on Islay.
What makes it special is the use of rare Canasta sherry casks — these casks originally held a blend of Oloroso (approx. 75 %) and Pedro Ximénez (25 %) sherries (or a mix thereof) from Williams & Humbert in Jerez.
The whisky is non-chill filtered, has no added colour, and is bottled at 51.2% ABV.
Importantly, it’s an unpeated single malt in Bunnahabhain’s traditional style (they are better known for their unpeated coastal spirit).
The use of Canasta casks (a “sweetened Oloroso/cream” style) is clearly designed to infuse rich, dessert-sherry influenced sweetness and spice into the whisky, marrying Bunnahabhain’s character with an opportunistic cask experiment.

Tasting Notes

Described as “polished mahogany”.
NOSE:
Caramelised and sweet fruits, honeyed roasted nuts, waves of cinnamon, clove, and a hint of rancio.
TASTE:
Maple syrup richness up front, creamy vanilla, dried figs, poached pears, sprinkle of cocoa. A gentle twist of orange appears in the background.
FINISH:
Long, sweet: brown sugar, red apples, vanilla custard.
