Tasting Notes
COLOR:
Deep purple-red, dense and dark.
NOSE:
Black fruits dominate (blackberry, black cherry, wild blackberries), often with exotic citrus hints, balsamic touches. Also floral notes like violet and/or juniper, menthol, licorice. Mineral and saline undertones are strong, sometimes with graphite, undergrowth or tobacco.
TASTE:
Powerful and dynamic; well-structured with fine, polished tannins. Good acidity (saline acidity often noted) that gives freshness and tension. Fruit is ripe but not overripe, balancing richness with freshness. As the wine opens, floral and menthol/wood notes emerge.
FINISH:
The finish is long, persistent, often with licorice, mineral/saline notes.
Food Pairing
Volta di Bertinga is rich, powerful, yet with good acidity and structure. Here are pairing suggestions:
Red-meats: grilled steak, sirloin, ribeye. Cuts with some fat or char to match the tannin and intensity.
Game: venison, wild boar, perhaps duck with richer sauces.
Braises / slow-cooked meats: lamb shanks, beef cheeks, stews.
Mature, aged cheeses: hard cheeses with pronounced flavour (parmigiano, aged pecorino), or cheeses with pungency.
Dishes with herbal, earthy or smoky components: mushrooms, truffle sauces, herbs like rosemary or thyme; also dishes with licorice or dark spices could echo the wine’s flavour.
